Our Process
Beef shares are an opportunity for customers to buy beef by the quarter, half, or whole cow. This gives our customers the ability to restock their freezers with local beef at a cheaper cost than buying individual cuts even at the grocery store.
All of our cattle are grass-fed, grain-finished. Once they are taken to the processor, we will be in contact within the week to go over the cut sheet. Expect about 3 weeks or so for processing as the beef will be hanging for 14-21 days. Once we know a pickup date, we will arrange to deliver the beef directly to your freezer at no added cost (within 30 miles of Denton, Texas). We are able to deliver each order to up to two different families should the order be split in half. We just ask that you please give us this information at the time of deposit.
Please remember when purchasing a quarter cow, you must choose front or hind quarter at time of deposit. Front quarter includes chuck roasts, short ribs, ribeye, brisket, soup bones, and ground beef. Hind includes sirloin, NY strips, and filet mignon vs T-bone, flank steak, stew, and ground beef. You can expect the approximate break down to be 15% steaks, 35% roasts, 35% ground beef, and 15% other.
Pricing
Pricing of the beef shares depends on the quantity purchased. The more you buy, the cheaper it will be. Price is per processed/packaged weight, so what you get is what you will be charged for. Processing fees are included except for additional add-ons that can be chosen by the customer (i.e. vacuum-packaged ground beef). Some ranches charge for hanging weight, but it is not the most accurate way to know how much beef would be sold. A $200 deposit is required for purchase. Please note that every animal is different and the approximate weights listed on the order form below is an estimate.
Custom Cuts
Custom cuts are available for whole beef order only. Once a customer decides to proceed with whole beef order, we will be in contact to review the cut sheet. With this, you will be able to specify how many steaks per package, size of roasts, thickness of ribeye, etc. This is the fun part! In the past, we have had customers come to us after doing their own research of specifics that they want and we work with the processor to make sure their requests are done right! We are one of the only local companies that allows you to customize your beef order and we take pride in this.
Storage
It is recommended to have about 1 cubic foot of freezer space for each 25 lbs of beef. Please make sure that you have a freezer large enough to store all of your meat at the time of delivery.
